1. Kesar Mango Shrikhand
Whisk hung curd until smooth. Fold in fresh Kesar mango pulp. Add a small amount of powdered sugar and cardamom. Chill before serving. Garnish with chopped pistachios.
2. Kesar Mango Lassi
Blend ripe Kesar mango cubes with yogurt and a little cold milk. Add a small amount of sugar if needed. Serve chilled with a light sprinkle of saffron.
2. Kesar Mango Kulfi
Blend Kesar mango pulp with reduced milk (rabdi consistency). Add cardamom powder and chopped nuts. Pour into moulds and freeze until firm. Serve frozen.
2. Kesar Mango Basundi
Simmer milk until reduced. Cool slightly and add diced Kesar mango. Add cardamom and chopped nuts. Chill before serving.
2. Fresh Kesar Mango Salad
Dice Kesar mango and combine with mint leaves. Add a squeeze of lime and pinch of salt. Toss gently and serve chilled.
